I finally found a Nutritionist
who wasn’t going to break my budget and specifically works with people with
Auto Immune Disease. I admit I was about to walk out of the appointment after
the first few minutes as she was telling me about how blood sugar is
controlled. Ummm…yeah got that and doing it. Still gaining weight and thanks
for nothing. But instead I just shed a small tear and stayed put. Man am I glad
I did. She told me about what she wants me to do. Gave me a list of Fats,
Proteins and Carbs all with weights and measures for each and she said I am
going to eat one thing from each column at every meal and snack BUT FIRST………
GAPS DIET…WTF is that???
GAPS includes the 3 main principles:
1) Healing the gut- by avoiding all foods that irritate it, and by consuming only foods that will nourish and heal it.
2)Repopulating the gut with beneficial bacteria- This is done by avoiding all foods that
Feed bad bacteria/gut flora.As well as high quality probiotics are used to actively repopulate the gut while all this cleansing/starving bad bacteria is taking place.
3) Getting rid of toxins- this happens in a number of ways. by limiting the diet to only foods that can be easily digested and eliminated, by strengthening the gut and the beneficial bacteria so that they can deal with the toxins thoroughly.
Detoxifying is one of the most crucial benefits of the GAPS Diet. When there is an overgrowth of yeast,bad bacteria,fungi,parasites and anything else that stems from gut dysbiosis ( an unhealthy, improperly functioning intestinal tract) myriads of dangerous toxins are produced. These toxins are able to alter brain chemistry,cause auto-immune reactions, severly hamper immunity against infections and more.
So basically it is like pressing the "reset" button on my gut flora after a lifetime of antibiotics and other toxins. And as I have learned the hard way.... my body WILL NOT release toxins thanks to the MTHFR
I basically have organic bone
broth with certain veggies and meats boiled in the broth. Soup. Soup for breakfast
,lunch and dinner. I haven’t had a “snack” all week because lets face it…who
the hell wants broth for a snack.

I also cut out coffee. Kind of big
deal. So for 7 days I have eaten chicken and beef bone broth from free range
grass fed animals with broccoli, carrots, squash,spinach,beef and chicken. The
scale says I have gained like 10 pounds but my pants tell me I have definitely lost
weight. As happy as that makes me there are a few other things that I am
shocked about.
1. I have
finger and toe nails. No really this is HUGE!! I haven’t had any sort of a nail
in years. Some friends may remember when I was gluing Jamberry nails to my toes
2 summers ago to give the appearance of nails. My nails always broke, split and
in general just looked like shit. Now I can see white! And lots of it
considering it has only been a week.
2. My stomach
and abdominal area are far less swollen. One of the last straws and the reason I made the call to the Nutritionist is that
everything I was eating was just sitting there. I could watch my stomach get
larger as the day went on. Even water. It was so frustrating.
3. Did you know
that it IS possible to work out for 3 hours on only beef broth and boiled
hamburger?? I was actually really surprised. I am not ready to go for any 3
hour runs or bikes yet but in the safety of my home or pool…it is doable.

So the next
step is to slowly add 1 food a day from an approved food list she gave me.
Monday starts organic pasteurized egg yolks for 3 days. Then 1 tsp Coconut oil
for 3 days. Then 1 tsp ghee for 3 days.
So long as I have no reactions ( headache, sudden fatigue, rash etc) then I go
on to Stage 3.
The thought
is that this whole process will take 6-8 weeks. Then I can go to a regular diet
because my gut will be healed and I should be able to digest food normally
again.
So that’s it
for week 1!!!
