It has been some time since I posted here. I only post when I feel I need or want to. The subject must be important to me in order to want to share my thoughts with the few of you who may read this.   I am pretty sure that none of you know what exactly I do for work. Well, one small part of my job is redacting audio and video for the Police Department. Now that we have body cameras and a new recording system that small part of my job has increased. With that I now see and hear more than I ever did before. This week as I was redacting a case my gut hurt and I felt sick. I was listening to a woman tell officers all the reasons why her former partner would never follow through on threats to her life. All I could think about was Mary. All I could think about was all these excuses mean nothing when one event can end your life. One event that will forever change your friends and family’s life. So… week 2 was actually week 2 and 3. I had a few set backs so it took 14 days instead of 9 to get to stage 3 but I made it!!! Setbacks: Ghee----not going to happen. I am kind of bummed out about this because I really do not care for the taste of coconut in my food all the time. The only 2 options I have right now to cook/pan sear foods is coconut oil and ghee until week 5. It took 2 days to figure out my stomach can’t take it yet. I had plans to bike on my days off and needed something portable to take with me to New River to eat after my workout. I steamed cauliflower and added salt, pepper and eggs and friend little “pancakes” in ghee. FOOD!!! Real food that was not boiled. I immediately ate 4 little pancakes for supper and had issues all most right away but ignored them. The next day my stomach was so swollen L  No ghee. However last night I had avocado. I finally found a Nutritionist who wasn’t going to break my budget and specifically works with people with Auto Immune Disease. I admit I was about to walk out of the appointment after the first few minutes as she was telling me about how blood sugar is controlled. Ummm…yeah got that and doing it. Still gaining weight and thanks for nothing. But instead I just shed a small tear and stayed put. Man am I glad I did. She told me about what she wants me to do.
